A little sweet, a little crisp — carrot kheer served in crunchy pur bowls!

Ingredients
Carrot Kheer
1 cup cooked rice (leftover works best) or ½ cup raw rice boiled
1 cup milk (for blending)
3 cups milk
2 cups grated carrot
½ teaspoon cardamom powder
1 cup Bakels Delight imitation cream or dessert cream
Pur Bowls
Samoosa sheets
Melted butter (for brushing)
Oil (for frying)
Steel cups (as moulds)

Method
For the Kheer
1. Blend cooked rice with 1 cup milk until smooth.
2. Pour into a pot, add 3 cups milk and grated carrot.
3. Bring to a boil, then simmer for ±30 minutes until the carrots soften.
4. Stir in cardamom powder and cream.
5. Allow to cool completely, then refrigerate until chilled.
For Pur Bowls
1. Cut samoosa sheets into squares.
2. Brush one square with melted butter and place a second square over it.
3. Grease the back of steel cups with oil and drape the sheets over, pressing gently to shape.
4. Fry in hot oil, press down until it holds the bowl shape. Remove cup and fry until golden + crisp.
To Serve Fill each pur bowl with chilled carrot kheer and top with flaked almonds.(Or simply serve in bowls if you prefer!)
