Lemon & Herb Butter Sauce Pan Fried Hake Rec cred: Ruhana EbrahimPic cred: @mama_taught_me_well Ingredients:1kg hake fillets or 2 boxes hake medallions1 tablespoon olive oil½ teaspoon salt ½ teaspoon white pepper60g butter½ lemon juiced1 tablespoon chopped parsley 1 tablespoon chopped chives Method:1. Heat the olive oil in a large frying pan and add the seasoned hake to pan.2. Cook for a couple of minutes then add little knobs of butter to the pan around each hake and cook for another couple of minutes until it's cooked through. (This will depend on the thickness of the fillets or medallions.) 3. Transfer to a serving dish while you make the sauce.4. Add the rest of the butter to the frying pan and allow it to gently melt over a moderate heat. 5. When it has melted, add lemon juice and the herbs, swirling to combine. Season to taste. 6. Spoon this sauce over the hake fillets and serve with baby potatoes and salad.
