20cm baked sponge cake
Cheese Filling-2 tubs ricotta cheese ½ - 1 cup icing sugar 2/3 cup dried mixed fruit cubes1 slab bournville dark chocolate (coarsely grated)125ml fresh cream
Syrup-¼ cup sugar¼ cup water
Frosting 125ml fresh cream2-3 tablespoon icing sugar ⅓ cup chopped pistachio nuts Dried fruit cubes/fresh berries
Method:1. Boil water and sugar till a syrup forms. 2. Whilst the syrup is being made, make the filling.3. In a large bowl, combine ricotta, sugar, dried fruit, and chocolate.4. Whip cream till stiff then fold in and refrigerate filling.5. Cut sponge cake into thirds. 6. Brush on syrup onto cake pieces till nice and moist.7. Spoon on filling onto cake pieces and assemble.8. Whip the cream and sugar for frosting till stiff. 9. Cover top of cake or all over with whipped cream. Decorate with pistachios & fruit.10. Chill in fridge till needed.
Note: I didn't have more Whipped cream to cover cake, so decorated onto filling. You could even frost cake with chocolate buttercream if you'd like.
