Brinjal 🍆& potato 🥔 curry Recipe & Picture Credit:Fatima A Latif @_culinaryinspiration_ Bismillah hir Rahman nir Raheem 2 small brinjals cut into cubes2 potatoes cut into cubes2 tablespoons oil1 onion chopped fine (or a handful or fried onions)2 big tomatoes liquidised (I liquidize a whole lot at a time and to each jug I add 1 tin of whole peeled tomatoes)1 teaspoon chilli garlic masala1 teaspoon crushed garlic 1 teaspoon fine red chilli powder 1 teaspoon dhana (coriander powder)1 teaspoon jiro (cumin powder)¼ teaspoon tumeric 2 teaspoons freshly ground coriander leaves 1 teaspoon fine chillies 3 tablespoons double cream yogurt In a pot heat oil, braise onion till golden brown. (If using fried onion add tomatoes together).Once onion has turned golden add in tomatoes and spices. Cook for a few minutes. Add in potatoes and brinjals. Add water as needed. Cook till potatoes are nice and soft. Once cooked and potatoes are soft add in yogurt. Cook for a few minutes. Serve with mielie meal roti. Mix all ingredients. Make dough with hot tap water. Knead well. Roll round, not thin and cook with ghee (Clarified butter) (Clarified butter) on tawa. Makes 4 small rotis.
