Blackberry Trifle

Ingredients:1 fresh cream swiss rollWhipped cream1 box Delish vanilla instant pudding450ml milk
Compote-400g blackberries (some reserved for garnish)⅓ cup sugar¼ cup hot water1 tablespoon lemon juicepinch of salt
Method:1. Put berries, sugar, hot water, and lemon juice in a saucepan.2. Cook over medium heat for 15-20 minutes or until the berries start to break down and get jammy, stirring often. 3. Slice swiss into even slices.4. Line along the sides and bottom of trifle bowl with swiss roll slices.5. Spoon on vanilla pudding, then compote and then whipped cream.6. Garnish with fresh blackberries.7. Place in refrigerator to chill completely.8. Alternatively you could make mini trifles, alternating layers twice each.
