3 eggs separated 2 tablespoons caster sugar 100g dark chocolate 125ml fresh cream pinch of salt 2 teaspoon vanilla
Melt chocolate in bowl over saucepan with simmering water. Beat sugar & yolks till thick & creamy. Add the melted chocolate & beat again until well blended. In a separate bowl whip the cream until stiff, add to the chocolate mixture and fold in with a metal spoon. Beat egg whites with pinch of salt until stiff. Add to the chocolate mixture and fold in with a metal spoon. Add vanilla & egg whites. Spoon into ramekins and chill in the fridge for a few hours until set. Garnish with a dollop of whipped cream.
