Beat:250g softened butter 1 cup sugar Add in 1 eggVanilla extract 1 teaspoon baking powder 2 tablespoon coffee 3 tablespoon cocoa 3 cups coconut 2 cups flour Beat till a dough forms.I use my standmixer with the paddle attachment. Roll out dough. Scrape with fork. Cut and bake.I Divide the dough into 6 balls and roll into logs. Place in fridge about an hour. Slice not too thin.
