INGREDIENTS
4 eggs1 cup castor sugar½ cup oil1 teaspoon vanilla essence½ cup warm water4 teaspoon cocoa powder1 cup flour2 teaspoon baking powder
METHOD
1. Preheat oven to 180°C.2. Grease with Spray 'and Cook & line 2x small sheet trays with baking paper. Spray on the baking paper as well.3. Beat eggs and sugar for till pale & fluffy (do not over beat or beat too fast, or the batter will incorporate too much air and sink).4. Beat in oil & vanilla.5. Mix water & cocoa powder. Add to mixture.6. Sift in flour and baking powder.7. Beat till smooth and just incorporated.8. Pour into sheet trays make an ultra thin layer of cake.9. Bake in preheated oven for 10-15min or until a skewer inserted in center removes clean.10. Allow to cool. Remove from pan.11. With a large enough round cutter, cut circles of cake.12. Cut the circles in even halves.13. Sandwich the cakes with whipped cream or ice cream, or mousse or buttercream frosting. 14. Close it gently so it does not ooze out.15. Using a firm cupcake cup, stretch the cup longwards, elongating it for the cake halves to stand upright.16. Decorate with melted chocolate and nuts/fruit/edible flowers.17. Do not throw away the cake off cuts. 18. You can use it for cake pops or even as a crumb to coat a frosted cake all over.
