INGREDIENTS
¼ lb butter1 egg1 cup Caster sugar1 teaspoon vanilla
1 ½ c flour1 teaspoon baking powder
200g dates pitted and chopped1 teaspoon bicarb1 cup pecans or nuts of choice chopped1 ¼ c boiling water
½ c fresh cream2 tablespoon butter5 tablespoon brown sugar¼ cup chopped nuts
METHOD
Add the chopped dates, nuts, bicarb and boiling together and keep aside to soften a bitBeat together first 4 ingredientsSift together next 2Beat all of the above together and bake at 180 u til done - pour over topping
Boil remaining 4 ingredients together (last 4 on list above) and pour over cake
INFO & TIPS
If baking in a bundt pan I'd double recipe next time
