INGREDIENTS
1 cup brown sugar
4 eggs
1 ¼ cups oil
2 cups cake flour
¼ teaspoon salt
10ml cinnamon
5ml bicarb
2 teaspoon baking powder
1 cup grated carrots
½ cup grated pineapple (drained)
¾ cup coconut
1 cup chopped nuts
METHOD
Beat together eggs, oil & sugar. Add sifted dry ingredients, coconut,nuts, carrots & pineapple. Don't over-beat. Pour into ring pan & bake @ 180*C for 35 minutes or till done.
