INGREDIENTS
1 whole chicken with skin on
Rub Ingredients¾ block softend butter6-8 finely diced cloves of garlic1 head ginger grated 2-3 finely diced greed chillies 2 tablespoon finely diced fresh parsley ½ teaspoon salt 1 teaspoon fresh ground black pepper½ teaspoon white pepper1 teaspoon lemon pepper1 teaspoon Aromat (a South African Spice)2 teaspoon chicken spice of your choice 1Tbls saracha sauce¼ cup lemon juice
Bed for chicken (veggies)2 red onions cut in wedges 4 garlic cloves roughly chopped½ head ginger cut into strips 2 potatoes cut into wedges ½ a butter nut cut into pieces (Add ony veggies of your choice)Season with salt and pepper
Sauce½ block garlic butter¼ cup lemon juice¼ bottle calistos gold sauceFinely chopped parsley
METHOD
Mix all rub ingredients together and rub into chicken get it under the skin, aswell as in the cavity
Put the one red onion (6 pieces )into the cavity
Place the chicken in a greased deep oven tray in top of the veggies season the veggies
Bake @180 for 80-90 minutes depending on the size of your chicken
Melt sauce in sauce pan and serve with chicken

Serve with spicy rice chips and garlic bread
