INGREDIENTS
250g butter ½ cup castor sugar1 egg4 tablespoon oil+- 4 cups flour to make dough2 teaspoon baking powder 1 teaspoon vanilla essence Pinch of salt
Topping: DatesPecan nutsJam Coconut
METHOD
Cream butter and sugar. Add eggs, oil and vanilla essence. Mix. Add the rest of the ingredients. Divide the dough into two portions, a smaller portion for grating. Spread the larger portion in a greased ovenproof dish. Top with jam, chopped dates, chopped pecans and sprinkle dessicated coconut. Grate the remainder dough over the top. Bake at until done.
