1. Wash potatoes and cut into medallions with skin on.2. Drizzle some oil onto a grill pan.3. Char potatoes on either side.4. Place into an oven proof dish.5. Season with salt, veggie spice and rough red chillies.6. Dot all over with butter.7. Cover with foil and bake till sweet potatoes are super tender.8. Remove foil and allow to sizzle on top a little.
