INGREDIENTS
1 tablespoon butter 1 tablespoon oil 90g of popcorn kernels
210g castor sugar 100ml water 1 tablespoon butter
METHOD
Add 1 tablespoon butter and 1 tablespoon of oil to a pot on medium heat. Once hot, add in popcorn kernels, mix the kernels into the oil and butter to ensure all are coated. Cover the pot with the lid and remove once all the kernels have been popped. Drizzle over 1 teaspoon salt.
In a separate pan Add 210g of castor sugar and 100ml of water over medium heat. DO NOT MIX OR STIR as the mixture may crystallize The mixture will begin to boil and in +-20 minutes will turn an amber colour.Keep an eye on the mixture at this stage as the caramel may burn if the heat is too high.Remove from heat and stir in 1 tablespoon butter. Immediately pour over popcorn and coat popcorn in caramel Using a wooden spoon , spread on the popcorn on a lined tray to cool Once cool break into smaller pieces and enjoy
