INGREDIENTS
For the pastry2 cups all purpose flour, 180g butter unsalted, 1 teaspoon lemon juice, cold water as required .
For the fruit feeling 3 apples, 2 peaches, half cup of mixed nuts, sugar 1 cup and corn starch 2 tablespoon.
METHOD
First knead the flour, butter and lemon juice together with cold water to form a dough and keep in fridge for 30 minutesMeantime peel and cut the apples, peaches and nuts to small pieces and add them in a pan with sugar and half cup water cook till sugar dissolves Add in corn starch and cook untill the fruit mixture is thick let it cool. Remove dough from freezer and using a 15 cm pie pan roll out the dough and blind bake it for 15 minutes or untill it's slightly golden.Remove from oven add in the fruit mixture and with remaining dough you can either cover the whole pie or cut stripes and decorate it on top and bake further for 20 minutes.
