1. Grease a snowball pan. Pack the rice into the domes and flatten the top. (Rice must be compact).2. Once rice has firmed into shape, gently turn the pan over and tap out.3. Using one down (round side downwards), place few small leaves lettuce down, then few slices of avocado down. 4. Sprinkle some salt and pepper, then arrange on some smoked salmon.5. Place pickled ginger or beetroot slices and drizzle on some soy sauce.6. Place another rice dome over to resemble a bun.7. Use nori as instructed. Then cut off a strip and tuck over the "bun".8. Sprinkle on sesame seeds & serve with additional soy sauce for dipping.
