INGREDIENTS
Slice potatoes into circlesSlice onions into thin rings Slice tomatoes into thin rings Slice peppers into thin ringsSlice branjol into med rings
METHOD
Place ghee (Clarified butter) in a pot.... layer veggies add a hand full of mixed veggies... in a bowl mix together salt chilli powder dhana Jeeru (Cumin) arad (Turmeric) and garlic...Sprinkle over veggies and cook until done.

I layered in a pyrex. Wet the bottom of pyrex with some melted ghee.
Follow the steps as above in layering of the vegetables .
I added 2 tsps of methi /achaar masala to the spices.
I sprinkled some over the veggies & kept some behind & mixed it with 1/2 cup water & poured it over the vegetable.
Add 2 curry spoons of melted ghee over veggies with a sprig of curry leaves.
Cover with foil & bake on 180 deg for 1 hour.
Garnish with chopped dhania.
