INGREDIENTS
1 chicken1 large onion or 2 medium sliced fine4 cinnamon sticks1 teaspoon whole cumin3 cloves3 pepper corns3 or 4 carrots grated1 and ½ tablespoon red ginger garlic paste2 or 3 whole green chilli½ teaspoon tumeric3 tablespoon dessicated coconut3 tablespoon ground almond3 tablespoon lemon juice¾ tin tomato puree (large tin)1 and ½ tablespoon coriander powderHandful of green coriander. (chopped)A stem of chopped spring onion (optional)Salt3 potatoes (cut into 2 or 3 and fried. Season with salt)2 or 2.5 cups rice boiled in salty water until half done.Red chilli flakes/ powder (use to your desired heat)1 level teaspoon saffron crushed in 1 cup water
METHOD
1. Braise onions with whole spices and oil, until light brown.2. Add ginger garlic paste, roast for a few secs.3. Add chicken, carrots, whole green chilli and tumeric.4. Steam until the chicken changes colour. (don't fully cook)5. Add tomato puree, greens, almond flour, coconut, coriander powder, salt (I used 2 teaspoon rough salt for the chicken mix)Stir through.Flatten.6. Throw half cup of saffron water into the chicken mix.
7. Add fried potatoes, seasoned with fine salt.8. Add rice.9 Pour the remaining water over the rice.Steam on medium, then low, until doneApprox 45min.
Make a tempered mix :A few onion slices, cumin seeds until pink.Throw over the rice.
To plate :Remove white rice and potatoes and add to a platter.Toss the chicken mix with a little white rice and add to aseperate platter or on a seperate section of the sameplatter.
