500g haddock fillets Salt and pepper to taste Drizzle olive oil 2 tablespoon flour 2 tablespoon olive oil for searing 20g garlic butter 1 spring fresh thyme
Season fillets with salt pepper drizzle of olive oil. Dip fish fillet in flour and shake away excess. Heat a non stick pan until hot add 2 tablespoon olive oil and sear fillet skin side down for 2 minutes turn over and sear for another 2 minutes. Add garlic butter and thyme baste fillets with the butter.
