INGREDIENTS
7 carrots, peeled and grated
3 oranges,
2 tablespoon orange juice
1 tablespoon lemon juice
2 tablespoon extra virgin olive oil
½ teaspoon sea salt
½ teaspoon freshly ground black pepper
½ teaspoon ground cumin
½ teaspoon ground cinnamon
1 teaspoon icing sugar
handful of washed and finely chopped fresh coriander or mint
leaves
METHOD
Take 2 of the oranges peel and cut crossways into 1cm slices, then
into small pieces, till about 1cm wide
2. Then squeeze the juice from the left over orange
3. Mix orange juice, lemon juice, olive oil, sea salt, pepper,
cumin, cinnamon and icing sugar in a bowl and whisk. Add the grated
carrot, orange segments and coriander or mint and lightly toss.
