RECIPE
3 eggs
1 cup castor sugar
1 cup oil
3 teaspoon baking powder
1 ½ cups flour
2 teaspoon cinnamon powder
Pinch of salt
½ teaspoon bicarbonate of soda
2 cups grated carrots
¾ cup pecan nuts - chopped
¼ cup water
Beat eggs and sugar till light and creamy.
Add oil and beat well. Sift dry ingredients and add to batter. Add in carrots and nuts. Lastly add in water.
Bake at 180 for about 30-40 minutes
Cream cheese icing :
2 tubs cream cheese - softened
230g butter
2 cups sifted icing sugar
1 teaspoon vanilla essence
Beat butter, cheese and icing sugar together. Add in vanilla essence. Put into refrigerator for about 15-20 minutes. Spread over cake
