INGREDIENTS
2 cups sifted self raising flour¼ teaspoon salt500g Woolworths double cream plain yoghurt
METHOD
1. Mix together with a silicone spatula till almost together.2. Then bind lightly together with greased hands. (Do not overwork the dough).3. With lightly oiled hands, divide dough into 1 dzn even sized balls or 1 ½ dzn smaller balls (for smaller sized vetkoek).4. Preheat your deep fryer to 145degC oil. 5. When ready, gently place the dough into fryer. (I kept the basket in so the dough doesn't touch the element).6. Fry till golden on one side, then flip over and fry till golden on the other side.7. Scoop out and drain on kitchen paper. 8. Cut one open to see if it fully cooked through.9. The dough should be light, fluffy and like a springy drop donut texture 10. Eat as is or cut open like a pita and fill with mince or mutton curry OR make a hole on the top stuff like a bunny chow OR have with butter, jam or jam & whipped cream!
