Lemon Garlic Butter Sauce:100g butter (chopped into cubes)25g garlic butter1 teaspoon garlic purée Juice of half a fresh lemon½ teaspoon sugarSalt to taste¾ teaspoon Coarse black pepper1 teaspoon Dried mixed herbs
Lemon Chilli Butter Sauce:125g butter (chopped into cubes)Juice of half a fresh lemon½ teaspoon sugarSalt to taste½ teaspoon Coarse red chilli¼ teaspoon paprika powderPinch of Coarse black pepper1 teaspoon Dried Basil

METHOD
Method For the Lemon Butter Sauce:1.) Add butter to a light-coloured saucepan (this is important so you can see that it does not burn) and melt butter over medium heat.2.) Once butter is melted, add lemon juice, parsley,salt, sugar, chilli flakes and pepper and simmer for 3 minutes.3.) Switch off the heat (add cream at this point for a creamy sauce) and serve over fish, chicken, pasta or the vegetables of your choice.
