INGREDIENTS
2 onions (sliced)
2 tablespoon oil
1 tablespoon butter/margarine
1 tomato (grated/liquidised)
1 teaspoon tumeric
few drops of lemon juice (to taste)
1 teaspoon ground cumin/coriander
1 teaspoon salt
2 teaspoon garlic paste
1 tablespoon tomato puree
1 teaspoon chilli powder
Fish Croquette
650g fish
3 slices stale bread (or breadcrumbs)
1 teaspoon garlic paste
1 teaspoon salt (to taste)
1 teaspoon black pepper (to taste, be generous)
1 egg
3 tablespoon parsely chopped (or coriander but parsley has a nice strong flavour)
METHOD
1. Braise onion in oil/butter till glossy
2. Add garlic, spices and tomato
3. Simmer gently and season to taste with salt and lemon juice
4. Meanwhile cook the fish for croquette (fry in a little oil)
5. Strain fish and squeeze water from bread
6. Add to the rest of the ingredients and mix to form a frikkadel mixture
7. Roll small balls in your hand and fry in a little oil and then add to curry sauce immediately.
8. Be careful not to break them when serving.
INFO & TIPS
Serve with rice for a hearty, cold day comfort meal.
Makes 28 small croquettes. Serves 3 -4 people. Increase the amount of fish to serve more.
