Coating for lamingtons:2 cups icing sugar ⅓ cup cocoa3 tablespoon butter½ cup milk
Coconut for rolling
Beat eggs and castor sugar until foamy. Add oil and vanilla essence. Mix well. Sift flour, baking powder and salt. Add to the mixture gradually with milk. Mix again. Bake at 180C for approximately 30 minutes or until done.Bring ingredients for coating to a boil. Dip cool cake in warm coating and roll in desiccated coconut.

The cake can be eaten plain, made into lamingtons, iced with butter icing or jam and coconut.
