3 eggs separated1 cup cake flour ( remove 1 tablespoon and add 1 tablespoon corn flour )1 teaspoon baking powder @royalbakingpowdersa¾ cup sugarHalf cup oilHalf cup boiling water1 teaspoon vanilla essence1 teaspoon vinegarPinch salt
METHOD
Using a stand mixer. Beat your egg yolks and sugar till light and fluffy. While the mixer is still on, add your boiling water, oil and vanilla essence.Now add in your flour mixture with baking powder. Mix till well combined.In another bowl; beat your egg whites till half way near stiff peaks. Add the salt and vinegar. Now beat till you totally have stiff peaks. U know it's ready once u lift the bowl upside down..the egg wont move or fall.Mix half the egg whites into the cake batter mixture till well combined.Split the cake batter into 7 bowls and to each add your food colour ( rainbow colours ). Mix well.Now split the remaining egg whites into 7 and mix lightly into your coloured batter.Pour all the colors bit by bit into your greased and lined pan.Bake on 160c for 30 to 40 minutes till done.
Cool completely then decorate.
