2 cups packed grated doodhi 1 cup milk¼ cup condensed milk¼ teaspoon Elachi (cardomom) powdersugar or as per taste, (I added half cup, removing 2 tablespoon)Handful of cashew nutsHandful of raisins4 tablespoon ghee (Clarified butter)Green food colour.
In a non stick pan, heat up your ghee (Clarified butter) and roast the cashews and raisins. Do not brown. Add the doodhi and Elachi (cardomom) powder and mix well. Braise for 2 minutes. Add the food colour. Add the milk and condensed milk. Mix well. Allow to cook on medium heat till the moisture evaporates on an open pan. Keep checking and mixing so that the bottom does not scorch. Once you see the ghee (Clarified butter) separating, add the sugar. Mix well. The mixture will become liquidy again due to the sugar . Allow to cook uncovered on the same heat setting until the ghee (Clarified butter) separates and you get the consistency you like. Serves 3.Enjoy
