1 big aubergine(brenjol)washed and dried 1 cup plain yogurt / I used greek ( you can add more or less )2 big cloves fresh garlic cloves / 3 smalljuice of fresh lemon salt to taste 1 tablespoon tahini paste (optional)
Place the aubergine on a gas stove , directly yo the heat . allow the aubergine to burn on all sides , the peel should be crispy black . press the aubergine and see if it has soften completely . remove from heat . allow to cool slightly until you can handle it . cut it up , using your hand remove the skin completely.
Place the pulp in a food processor along with the chopped garlic cloves and tahini paste . pulse until smooth . add salt , squeeze 4 tablespoon lemon juice and pulse . add yogurt and give it 1 last pulse . adjust the tangyness by adding more of less lemon juice ( I add more lemon juice )
if yo do not have a gas stove place the aubergine in a foil , cover completely. sprinkle olive oil and bake in the oven until soft .
I prefer the gas stove because its quicker and I love the smokey taste .
place in a bowl or plate , flatten , garnish with olive oil and serve with bread of your choice as a dip or alternately use it as a spread with schwarmas or wraps .
