INGREDIENTS
¾ cup onions, chopped50g unsalted butter1 teaspoon dried herbs 2 ½ cups all purpose cake flour2 tspns baking powderfine salt to taste3-4 sprigs parsley, chopped1 x 410g whole kernel corn drained2 carrots, grated3 eggs315 ml sour milk (1 ¼ cup)1 green chilli, chopped2 ml black pepper (ground)
METHOD
Preheat oven to 180°C. Sauté the onion in butter. Add herbs and leave to cool.
Sift the flour, baking powder and salt.
Mix together the parsley, mealie kernels, carrot, chillies, pepper and onion.
Beat the eggs lightly with a fork and add the sour milk.
Sift the flour over the vegetable mixture and bind to a dough with the egg mixture.
Tip into a well-greased and lined (with grease-paper) pan and bake until it has risen and turned golden brown. Remove, slice, butter and enjoy!!!
