INGREDIENTS
2.5 c flour100g melted butter plus 1 TB to saute veggies1 teaspoon oil1 c frozen sweetcorn1 green chilli chopped1 garlic clove chopped1 red pepper finely choppedTwo handfuls of spinach150g feta,crumbled1 c of grated cheddar cheese ( reserve some for the tops)Plus minus 2 c of buttermilk ( add 1 c at a time,do not use all if not needed)Salt and freshly ground black pepper1 teaspoon of chilli powder1 teaspoon of vegetable seasoning1 egg
METHOD
Preheat your oven to 180 degrees CelsiusBoil the corn in some water until soft,then drain and fry in a TB of butter and oil.Season with the veggie seasoning and black pepper.Once cooked,add the spinach, allow to cool abit,then add green chilli,chopped garlic and red pepper. Mix well and set aside.
Add the melted butter into another bowl,and then add the buttermilk ( a little at a time) and then mix well. Add the egg and mix well again to avoid scrambling the egg.
In another bowl add the flour and chilli powder,then the cooked veggies,crumbled feta and grated cheese. Season with salt and pepper.
Scoop into a greased muffin pan and top with the remaining grated cheese.
Bake for 15 to 20 minutes ( or until done)
Serve with with butter and enjoy!
INFO & TIPS
Add more green chillies (chopped) according to your preference.
You may also add a tap of mixed dried herbs if desired
