4 mint leaves1 small fresh pineapple (peeled and diced)6 litchies (canned)½ can strained litchi syrup3 tablespoon Roses lime cordial1 tray ice cubes icePineapple leavesMint2 drops green food coloring
1. Place the mint, pineapple, litchi, lime cordial, litchi syrup & food coloring in a blender.2. Add the ice and pulse liquidizer until the mixture is the consistency of shaved ice.3. Pour into a large chilled cocktail glass and garnish with pineapple leaves and a sprig of mint.
