INGREDIENTS
3 cups Bread flour1.5 teaspoon. Salt¼ teaspoon. Dried Active Yeast1.5 cups cool tap water (12oz)
Optional:Egg washSeeds or Everything Bagel Seasoning (recipe below)
METHOD
Combine dry ingredients in a large bowl. Mix through.
Add water and stir with whisk or handle of a wooden spoon till combined. Dough will be a bit sticky. Cover with cling wrap and leave to rise for 8-24 hours in an off oven or somewhere warm.
Dust counter liberally with flour then turn dough onto it. Portion out and shape as you wish. Put onto a tray or paddle lined with baking paper. Cover with tea towel (I first put over the cling wrap from before then towel). Let proof/rise again for 1-2 hours.
Preheat oven to 180 degrees Celsius with baking stone inside (I just used a normal oven tray). Let heat up for about 30 minutes if using stone, but I did 15 minutes for tray.
Brush rolls with egg wash and sprinkle seeds (eggs and seeds optional).
Slide rolls on paper onto heated tray and bake for about 15 minutes till nice and brown.

I make a batch and keep on hand. This will be too much for this recipe
2 Tbsps. Dried garlic flakes
2.5 Tbsps. Dried onion flakes
1.5 Tbsps. White sesame seeds
1 Tbsp. Black sesame seeds
1 Tbsp. Poppy seeds
1/2 Tbsp. Salt
