Saute in olive oil- two chopped onions- 1 bay leaf-1 garlic cloveCook for 3 minutes.Add:-two chopped tomatoes- 1 tlbspoon tomato pastemix well, cook for 3 minutes more. Add: -peeled and cleaned shrimp-salt-pepper-red or green chilli-1 tablespoon nandos sauce-chopped coriander-diced coloured peppers- boiling water (I put 6 cups water for 2 cups rice)- rice
cover and let the rice cook,add more water if needed,adjust the spices, add more coriander and it's ready!
