For DhalsI USE ONLY PEA DHAL ONLYIf Using all Dhals it must be 2 cups in total¼ cup oil dhal1 & ½ cup pea dhal¼ cup pink dhalRince and Soak the above dhals overnight or few hoursRince againThen boil with ½ teaspoon oil pinch of bicarb or Hing til soft and mushyWhen cooled(Optional Can beat it to a smooth paste or liquidise it in a blenderMEATS1 Kg Cut up Mutton or Chicken1 tablespoon ginger garlic paste½ teaspoon crushed or slivers of Garlic3 teaspoon dhania (coriander) (coriander) powder1 & ½ teaspoon jeeru (cumin) powder1 level teaspoon tumeric 1 teaspoon Salt2 Slit whole Green Chilli or Red 1 tablespoon red crushed Chilli+- 1 tablespoon Red chilli powder1 teaspoon crushed green chilli paste (Optional) 1 large onion or 2 medium (keep some aside for wagaar) 2 med tomatoes grated 1 full teaspoon Whole Jeeru (Cumin)3 cinnamon sticks⅓ cup of oil and little ghee (Clarified butter)3 Elachi (cardomom) (cardomom)2 cloves 4 - 5 whole peppercorns (slightly crushed) Chopped dhania (coriander) (coriander) leavesChopped shallot choppedfew curry and mint leaves
Heat oil or ghee (Clarified butter) add onions addAll the Elachi (cardomom) tuj (cinnamon stick) whole Jeeru (Cumin) pepppercorns and cloves and curry leavesLet the aroma ariseAdd the sliced Onions... Brsise till golden brown in colouradd all the meat Add the Ginger Garlic paste andThe slivered or crushed GarlicBraise wellFor 5 minutesNow add the rest of the spices Brsise for few minutesNow add the grated tomatoesAnd braise till all well infused with the meats Add +- 1 cup water allow the meats to soften Once soft add the already boiled dhalsBeat with hand beater Let it cook +-45min to 1 hour minutes when almost Add more water if necessary for nice thickish soupy DhalAdd 1 teaspoon garam masalaCook few more minutes OPTIONAL New Tip is add little Achaar masala also) Again Taste and Adjust the salts and Chilli Add a bit of Lemon JuiceMake a Wagaar3 tablespoon ghee (Clarified butter) (Clarified butter) ,1 teaspoon Whole Jeeru (Cumin)Pour over the cooked dhalGanish withAdd chopped greens For Rice Boil 3 cups for this recipe(can reduce to 2 if halving this recipe) Enjoy with Rice papar and kachombar
