INGREDIENTS
2 cups rice(any rice of your choice brown/basmati/
tastic) boiled and steamed
Punnet sliced mushrooms
1 green pepper chopped
Half onion chopped
Handful Fresh parsley
Handful fresh Green dhana
Few mint leaves
2 teaspoon crushed garlic
Salt
Pepper
Garlic pepper
Juice of 2 lemons
Zest of 1 lemon
2 tablespoon olive oil
4 tablespoon butter
METHOD
Heat olive oil in pan/wok. Add half garlic, lemon zest,
salt, pepper and garlic pepper to taste.
Add mushrooms and stir fry until nearly done.
Add green pepper and onion. Stir fry for a few minutes.
(They should still be crispy and not soft and mushy)
Leave aside.
Heat butter in pot. Add garlic. Fry till slightly pink.
Remove from heat and Mix in fresh chopped herbs
and lemon juice.
Toss rice in garlic butter. Mix veggies in.
Adjust salt, pepper and lemon juice to taste.
Serve with fish/meat dish of your choice.
