A simple and easy to prepare dish, that works well as a Light Meal OR as a Side Dish.
Chickpea and Pasta Salad

1-2 cups Cooked Pasta(of your choice)
1 can Chickpeas(rinsed and drained)
1⁄4 onion chopped
1 Small Carrot shredded(optional)
Red, green and yellow peppers chopped(amount according to preference)
1⁄4 tomato chopped
1 round of Feta Cheese crumbled/chopped
2 Tablespoons Fresh Coriander leaves chopped
Salt and Pepper to taste
1 teaspoon Olive Oil
2 teaspoons Lemon Juice
2 Tablespoons Mayonnaise
~mix together well the chickpeas with all ingredients,except pasta and Mayonnaise,in a dish
~allow to macerate for 5-10 minutes
~add in the pasta and Mayonnaise, toss well
~garnish with extra chopped coriander

~Use smaller types of Pasta Varieties for salads
~Avocado and Olives may also be added.
~ This salad works perfectly without Chickpeas as well, with just pasta.
~ Sliced cooked chicken may also be added.
~ Top this salad onto a bed of Salad greens, it makes for a wonderfully rounded meal.
