First prepare your ciabbata.I used Paul Hollywoods recipes. This recipe make 4 ciabattas.Or you can just buy 2😉
4 pieces chicken fillet sliced in half to make it thinner. U shud have 8 pieces2 tb lemon juice2 clove garlic grated1 teaspoon garlic salt1 teaspoon cumin powderSalt and pepper to tasteCoriander finely chopped handful2 tb honey2 tb oilAdd the above and mix well into chicken.Note- make extra sauce for use in salad and for basting. U can double the recipeLeave to marinate 30mins.Coat with flour, egg, crumbs.Slice cucumber finelySmall onion chopped in rings I used a mandolin. Sprinkle salt on onions and squeeze gently to release the water. Discard the water. Add the onion to cucumber and a little of the above sauce for chicken.
Airfry the chiken until cooked.I did 160c. Dont dry the chicken out.Baste the chicken with the sauce when it is done.
On the base of the ciabatta I added mayo and sriracha sauce mixed.Add your onion and cucumbers, chop up the chicken and close gently.
