INGREDIENTS
500g fresh White Fish fillets1 cup store bought Salsa 8 store bought Tortillas1 yellow pepper (julienned)Wooworths sliced pickled Jalapeño½ small red onion (chopped)Fresh coriander (chopped)
Avo dressing-1 avocado (peeled, pitted, chopped)2 tablespoon lime juice2 tablespoon vinegar½ teaspoon salt2 teaspoon honey
METHOD
1. For the dressing, add chopped avocado, lime juice, vinegar, salt and honey into a food processor. Blend till smooth.2. In a bowl, combine jalapeño, onion and coriander. 3. Pour over avocado mixture and toss to coat.4. Cover and place in refrigerator.5. Preheat oven to 200°C. 6. Place fish, skin side down in an oven dish.7. Cover with as much salsa as you would like, place in the oven and bake for 20-25 minutes, or until fish easily flakes with a fork.8. Remove skin from fish, then put it into a bowl and shred. 9. Mix well with the salsa it was cooked in.10. Place shredded fish in tortillas, topped with avo dressed veg. Close & serve.
