INGREDIENTS
3 chicken fillets steamed and shredded.Salt and pepper seasoning 1 red onion finely sliced 1 teaspoon chicken spice 1 teaspoon ginger paste 1 Tablespoon olive oil (reserved)150g black olives pitted/chopped 1 Tablespoon butter ghee (Clarified butter) ½ teaspoon red crushed chillies ½ teaspoon green chillies paste mixed with 1 teaspoon olive oil and 1 teaspoon garlic.Dash of Aromat (a South African Spice)½ cup grated mozzarella cheese½ cup white cheddar cheese grated½ tub medium cream cheese.2 wheel fete cheese2 Tablespoon (knorr brand) thousand island sauce.¼ cup mixed robot diced peppersSeseme seeds sprinkles1 egg beaten Handful chopped spring onions 1 rolls ready puff pastry
METHOD
Prepare chicken fillet, steam in a saucepan with 1 cup water on stove until cooked, drain ,shred fillets and keep aside .In another frying pan add butter ghee (Clarified butter) and par fry chopped red onions. Add chicken with all seasoning ,spices and add 1 teaspoon olive oil, garlic and green chilli paste let it cook for a few minutes.Top with the robot coloured peppers and toss once and remove from stove top to cool
Add all grated cheeses, crumbled , olives,dash of Aromat (a South African Spice). Garnish with spring onions.Drizzle the reserved 1 Tblespoon of olive oil and 2 Tablespoon thousand knorr island sauce.Toss gently and your filling is now ready.Check seasoning before filling.
Filling and assembling the croissant Unroll your pastry on your board.Make a template of a triangle shape with a piece of clean cardboard.
Measure into equal half, make a mark and cut into two parts , Working first with the 1 of 2 horizontally measure and cut into triangle shapes ,sizes you will get at least 5 in each row x 4 rows. Place your filling at the base of each triangle and work folding and securing and moving towards the pointed end.Tuck the pointed end under the pasty.Brush with beaten egg and sprinkle with seseme seed.This can now be frozen overnight and later packed into required family sizes.Mark packaging clearly.Bake at pre heated oven 180 degrees until lightly brownServe at Iftaar treats with favourite tzatziki dip made of mint cucumber yogurt ,garlic and olive oil.
