1 ¼ cups grated carrots 1 ¼ cups water1 ¼ cups butter 1 cup semolina powder1 cup milk1 ¼ cups sugar4 eggs Yellow colour (Whipped cream, almonds and rose petals for decorating/serving)
1.) soften the carrots in ¼ cup butter with ¼ cup water.2.) when carrots are soft and the water has evaporated- add the remaining 1 cup butter and semolina powder and braise till the semolina is golden.3.) Add the renaming 1 cup of water and sugar and mix until until the sugar is dissolved.4.) add a pinch of yellow colour - beat eggs into the milk and add that to the pot - keep mixing for about 3-5mins, then leave on low to simmer until it’s cooked through (stir/whisk at intervals to ensure the carrot Sojee (semolina flour) doesn’t get lumpy or stick to the pot)5.) transfer to serving bowl and decorate as desired.
