INGREDIENTS
For the pur basket:Samosa pur offcuts 1 teaspoon oilButter
For the filling:Potato, chicken or steak (finely cubed)Ginger and garlicHot water1 teaspoon oilSalt to tasteRed chilli powder to taste ½-1 teaspoon peri peri salt (Nando’s or any you prefer)Tomato sauce Chilli sauce
For the topping:Grated cheeseGherkin slicesDried oreganoor green chutney
METHOD
For the pur baskets:1.) grease a muffin tray with butter.2.) add the oil to the samosa pur offcuts and mix - then arrange them in the muffin tray to form a basket shape.3.)Bake at 180degrees till slightly golden brown.4.) Remove from oven and keep aside.
For the filling:1.)Marinate the filling of your choice with all of the ingredients EXCEPT the sauces.Then add to a nonstick pot and cook till done - add hot water as and when required until filling is cooked, lastly add the sauces and mix well - remove from stove and leave to cool.
** Spoon the cold filling into the baked pur baskets, top with cheese, gherkins and oregano and bake again until golden brown before serving**
INFO & TIPS
These baskets can also be filled with Nutella or lotus biscoff and dusted with icing sugar for a sweet option. ☺️☺️☺️
