Date Mini Cakes

INGREDIENTS

¼ Cup dates, loose pitted2 eggs¾ Cup sugar1/4Cup Oil1 & ½ Cup Flour, sifted½ teaspoon bicarbonate of soda2 teaspoon Baking Powder1 teaspoon Vanilla Essence¼ Cup milkPinch salt1 Banana1 teaspoon Cinnamon

METHOD

In a bowl add the dry ingredient first. Set aside. Mix the eggs, sugar, oil until light & fluffy. Then add the banana mashed, vanilla essence, cinnamon. Mix everything until smooth. Add the dates lastly. Pour into muffin cups & bake in 160 degree oven for 30 minutes. Test with a toothpick, check if the cake is dry inside.
