INGREDIENTS
4 eggs½ cup caster sugar¼ cup flour¼ cup cornflour¼ cup cocoa1 teaspoon baking powder1 teaspoon vanilla essencePinch of salt
Filling : 1 cup fresh cream 2-3 tablespoon Caramel treat softened with a fork ½ slab Aero mint chocolate chopped
METHOD
Beat eggs until stiff and whiteAdd sugar and beat until it leaves a peakSift the dry ingredients 3 times and sift in one more time into the egg mixture and fold with a metal spoonLastly add vanilla essencePour into a greased and lined Swiss roll pan and bake at 200•C for 10-15 minutesTurn out immediately onto greaseproof paper sprinkled with caster sugarPeel of lining paper and trim edges with a sharp knifeRoll up cake with paper in between to make a Swiss rollCover with a cool damp cloth and cool slightlyUnroll and spread with filling and roll up again and allow to cool
Filling Beat fresh cream until stiff fold in the caramel, spread Caramel cream over the cake roll up dust the top with cocoa powder decorate top with more Aero
INFO & TIPS
For vanilla swiss roll omit the cocoa powder
