2 cups All purpose flour¼ cup soft ghee (Clarified butter) (not melted)1 tablespoon corn flourGreen chilli coursely crushed to taste 1 teaspoon salt1 teaspoon whole jeera crushed½ teaspoon turmeric powder 1 teaspoon dhana / coriander powder1 teaspoon sugar1 teaspoon seasame seeds1 tablespoon lemon juice¼ cup fresh fenugreek leaves chopped finely or frozen1 teaspoon crushed course dry red chilli+ - ½ cup water (room temp)to make a stiff dough
METHOD
Mix all the ingredients above to make a stiff hard dough.Leave to rest for 15 minutes..Divide into 40 pieces.Roll each one into a small puri /disc and cut 3 slits in the middle.Deep fry on low heat till lightly brown.. this takes time. Be patient with these.You will know when they are done when the oil stops bubbling.Store in an airtight container.Enjoy.
