Preheat oven to 180° Line 2 23cm round cake pans or one 23×23 rectangular baking pan with wax paper. Grease wax paper and sides of the pan well. In a large mixing bowl, beat sugar and eggs together untill slightly thickened ( + - 1 minutes) Add sifted flour, milk, oil, baking powder and vanilla essence then beat for another minute. Just untill the batter is smooth and creamy. (Don't overbeat) Pour the batter into the prepared baking pan(s). Bake in preheated oven for 30-40 minutes or until the top is golden and a toothpick poked into the centre of the layer comes out clean. A single rectangular plan will take longer. Loosen the sides of the cake from pan with a thin knife, then turn onto a rack, peel off wax paper. Let cool completely before frosting if desired.
