INGREDIENTS
Grated cheddar cheese2 dozen mini tortillasMayonnaise
Guacamole-1 avocado (mashed with dash lemon juice and pinch salt)
Filling-2 large chicken fillet1 tablespoon oil1 teaspoon red ginger garlic masala1 teaspoon ground garlic1 teaspoon dhana Jeeru (Cumin) (coriander cumin) powder½ teaspoon salt1 tablespoon lemon juice1 tablespoon mayonnaise2 tablespoon Peri-Peri sauce
Salsa-2 tomatoes (cubed)1 red onion (chopped)Fist fresh coriander (chopped)2 jalapenos (optional- chopped)Pinch salt and pepper
METHOD
1. Heat oil, and spices, ginger garlic masala and garlic. Braise for few seconds then add chicken and lemon juice.2. Cook chicken till almost done, then add mayo & peri-peri sauce.3. Cook till done, then shred and leave aside.4. Mix salsa ingredients. Fold tortilla into taco shell shape.5. Spoon in chicken, cheese, guacamole, salsa and mayo. Serve.
