INGREDIENTS
Fried Brinjal/Eggplant- 1 Large brinjal/ eggplant- 2 Cups Breadcrumbs - ½ Cup Plain Flour - 2 Eggs, Lightly Whisked - Oil From frying - Salt
Honey Sauce - ⅓ Cup Honey - 3 tablespoon Brown Vinegar - 2 teaspoon Soy sauce 1 teaspoon corn starch mixed with 2 tablespoon Water
METHOD
Step One:Cut brinjal/eggplant with the peal into rectangles ,place into colander set over a bowl throw salt over and allow to sit for +- 10 minutes.
Step Two: To make honey sauce, heat the honey, vinger and soy sauce in a sauce pan, Allow to simmer over medium heat then put the corn starch mixture and simmer until thick.
Step Three:Dip your brinjal/ Eggplant into flour, egg and breadcrumbs , Fry your brinjal/ eggplant until golden brown..
Pour your honey sauce over your fried brinjal/eggplant and enjoy..
INFO & TIPS
•When dipping I used to laye( Flour and water mixture) instead of dipped separately
• Sauce can be used as a dip as well..
