INGREDIENTS
Cupcakes:- 1 cup flour- ½ cup castor sugar- 2 teaspoons cinnamon- 1 teaspoon bicarb- 1 teaspoon baking powder-¼ teaspoon salt- 1 cup grated carrots-¼ cup oil-¼ cup buttermilk-1 teaspoon vanilla essence-2 eggs
Frosting:-125g cream cheese- 1 teaspoon vanilla essence-2 tablespoons butter (room temp.) -½ cup icing sugar (sifted)
METHOD
Cupcakes:Combine dry ingredients. In a separate bowl, combine the carrots, vanilla essence, oil and buttermilk. Add this to the dry ingredients. You can use an electric mixer for this. Once done, add beaten eggs and hand mix just until combined. Bake at 180° for 12-15 minutes. It should have a light brown colour.Frosting:Beat butter and cream cheese until smooth. Add remaining ingredients until combined. It isn't a very stiff frosting.
