Roast chickens (2 Baby chickens marinade) - I double this for 4 baby chickens 2 baby chickens2 ½ teaspoon red ginger garlic masala2 teaspoon salt2 heaped teaspoon fine red chilli powder2 teaspoon coarse red chillies1 teaspoon haldi½ teaspoon lemon pepper1 teaspoon Garam Masala ¼ cup lemon juice¼ cup oil2 tablespoon desiccated coconut2 tablespoon ground almonds½ tin (half of 410g tin) All gold tomato puree ½ teaspoon Elachi (cardomom) powder Few strands saffron pre soaked in a little water
Mix all ingredients into a paste and make 4 slits on baby chickens then marinate inside and out. Leave overnight. Heat some butter/ghee (Clarified butter) in a pot and add marinated chickens. Chickens can be stuffed and legs tied together. Start of on high heat then cook on medium to low heat till done. Garnish with fresh thyme before serving. Enjoy.
