INGREDIENTS
-2 karela (bitter gourds) (cleaned and sliced in crescents)-1/4cup boiled water-1 medium onion (sliced)-2 tomatoes (finely grated)-½ cup finely chopped coriander-a handful of Methi (Fenugreek) baaji leaves (depending on how bitter you want it to be) -1 teaspoon green masala or ginger/garlic -1 ¼ teaspoon salt- crushed green chilli to taste-3 teaspoon brown sugar-dhana Jeeru (Cumin) powder-arad (Turmeric) -3 eggs-Oil
METHOD
1.)Heat a non stick pan, add oil - once oil is medium hot add karela (bitter gourds) and fry for a bit then add ½ cup water and cook on medium heat till water is dissolved.2.)Cook onions in oil ( in a separate nonstick pot) till golden brown,add tomatoes and all spices and cook on medium heat for 10-15mins. Add the Methi (Fenugreek) baaji leaves - Then add the karela (bitter gourds) and dhania (coriander) to this,mix well and cook on low heat for 10mins.3.)Move karela (bitter gourds) to the sides of the pot,crack the 3 eggs in the middle and add salt and pepper,cook for a bit then scramble,lastly mix karela (bitter gourds) and scrambled egg together sprinkle brown sugar and steam on low for 10-15mins.

Serve with roti OR on toast
